酌言+2006-05-26 19:38-->引用:酌言 @ 2006-05-26 19:38 应该是先把米泡好吧！泡好米，包粽子包好在水中浸着，等到米煮熟这一过程中——还会有一膨胀过程，而粽子壳不会膨胀，所以粽子还是包得很紧！

天堑提出的异议，我反对：今天正好吃到婆婆送来的粽子，恰好婆婆的手艺里最爱吃的只有粽子，她包的粽子一定要先泡，而且似乎泡的时间要长，这样包出来的粽子，米粒儿油亮完整饱满滑爽。（可能有点点松不外表太好看，但吃起来感觉好）

如果后泡呢，可能外表看起来很紧，可吃的时候，米粒儿被挤成米团、或者米坨，无论是口感还是视觉感觉上就差多了。

以前在家，每天都会自已家包粽子，每次我都会在旁边帮忙包，我们家包形状不是这样的，像金字塔，不过在这里没有看到棕叶有卖的，要不我也来包。我们那还有一个风俗，就是一定会煮咸蛋吃，小孩子到了端午节每个女孩都会找纱线或针织线来编蛋套，可以挂在脖子上，然后到了那天，每个同学，男男女女都会带咸蛋到学校来，会来进行碰蛋的活动，看哪个蛋的壳最硬，可以坚持到最后的，男同学拿的是蛋王，女同学拿的就是蛋后。哈哈，通常这个蛋是不舍得吃再带回去的，但他们可以吃任何一个已碰破的蛋。不知现在的孩子还有没有我们之前的那些活动。此帖由 乐乐的妈 在 2006-05-27 11:36 进行编辑...

至于包粽子包得紧不紧的问题，好解决，我们会在包的时候在封最后一个口之前，用筷子在米里面插上几下，那么那些米啊，绿豆啊等等这类的就会比较紧啦，因为敝人包过粽子，在实际操作中得到的指点并且确实执行过。包的人可以试试哦。

昨天一位老师包了送给我们几个吃，很不错，自己包的就是比外面卖的好吃。闽南的肉粽里面是加肉、蛋黄和香菇的，但外面卖的大部分很腻，不喜欢。很想念西安的凉粽，什么都不加，纯糯米，加上蜂蜜水，凉凉的，那叫个爽～～
