这是从小最爱的妈妈烧的菜之一。材料和过程都不复杂,一看就会了。先来个卖相。

材料:茄子一个,切成角状。西红柿2个,切成牙状备用。蒜瓣适量,切成片备用。生抽,老抽,糖。植物油适量。

面糊:面粉和水调成稠糊糊,加一点盐调匀。

把茄子放到糊糊里,挂上面浆,同时做锅放油,加热。

开始煎茄子:把茄子块儿放入油中,用筷子翻个,直到煎到几个面金黄色。

炸好了照个相:就是这个样子,或者还可以黄些。但里面已经很软了,因为有面糊,所以茄子不会烂掉。

调料:把生抽(增加咸味),老抽(增加色彩),和2调羹白糖调匀。

把蒜瓣放入爆香

放入番茄,等番茄出汁,倒进刚才调好的调料。

Nikki and Felix+2005-09-25 10:48-->引用:Nikki and Felix @ 2005-09-25 10:48 贫家孩子,小时候不大吃得肉,最爱吃的就是红烧茄子,现在想起来是因为红烧茄子油水多(6岁时幸运有两天自己当家去食堂打菜自己吃了两天的红烧茄子),不过茄子还是成了除叶菜外最喜欢的蔬菜,要试试香烧茄子,怀念20-30年前中国土茄(长长弯弯的,产量不高的那种).
